Ice Cream

For 1L

3 egg yolks

650ml Whole Milk

25ml Double Cream

180g Sugar

2 Tbsp Skimmed Milk Powder

2-3 Tbsp Oil

Method

  1. Heat the milk in a saucepan until it reaches a simmer then add the skimmed milk powder and whisk until dissolved.
  2. Beat together the egg yolks, cream and sugar in a bowl.
  3. Gently pour the milk and cream over the sugar and eggs (not too fast or the egg will cook!)
  4. Add the mixture back to the pan and heat on low whilst stirring until the mix begins to thicken. 
  5. Add the oil whilst whisking or even better using a hand blender until fully incorporated.
  6. Once the mix has thickened, allow it to cool.
  7. Churn the mixture in your ice cream machine then serve immediately with more oil drizzled on top.
