For 1L
3 egg yolks
650ml Whole Milk
25ml Double Cream
180g Sugar
2 Tbsp Skimmed Milk Powder
2-3 Tbsp Oil
Method
- Heat the milk in a saucepan until it reaches a simmer then add the skimmed milk powder and whisk until dissolved.
- Beat together the egg yolks, cream and sugar in a bowl.
- Gently pour the milk and cream over the sugar and eggs (not too fast or the egg will cook!)
- Add the mixture back to the pan and heat on low whilst stirring until the mix begins to thicken.
- Add the oil whilst whisking or even better using a hand blender until fully incorporated.
- Once the mix has thickened, allow it to cool.
- Churn the mixture in your ice cream machine then serve immediately with more oil drizzled on top.
