Open-Faced Smoked Cheddar & Spiced Sussex Hot Sauce Bagel

British high welfare charcuterie and smoked goods producer based in Brighton using top quality produce. Who doesn’t love cheese? This incredible recipe is a masterpiece, indulgent, smokey & subtly spicy, this will become a sandwich staple for you.

Ingredients

• 4 bagels, halved

• 200g Curing Rebels smoked cheddar, grated

• 4 tbsp aioli (or good quality mayonnaise)

• 2–3 tbsp Spiced Sussex hot sauce (to taste)

• 80g mixed fresh greens and herbs (we used watercress & lovage)

• 12 padró n peppers (about 3 per person)

• 1 small red onion, thinly sliced and pickled in lemon juice

• Olive oil, for blistering peppers

• Salt, to taste

Method

1. Toast the Bagels: Slice each bagel in half and toast just the bottom halves until golden.

2. Make the Cheese Spread: Mix the grated smoked cheddar with the aioli and the Spiced

Sussex hot sauce to form a creamy, smoky, spicy spread.

3. Char the Peppers: Heat a splash of olive oil in a pan and blister the padró n peppers until

slightly charred. Season with a little salt.

4. Assemble the Bagels: Spread the spicy cheese-aioli mixture over each toasted bagel half

while warm, gilled for a further minute unit melted. Add Toppings: Finish with fresh

greens, charred padró n peppers, and a scattering of pickled red onion slices.

5. Serve Open-Faced: Present as open sandwiches and add a good dash of Spiced Sussex

hot sauce to taste.
