Sussex-Style Patatas Bravas

Ingredients

    •    500g new potatoes

    •    infused oil

    •    1 tbsp spiced Sussex salt

    •    250g Greek yogurt

    •    4 garlic cloves, finely chopped

    •    Juice of 1 lemon

    •    1 tbsp Sussex spicy sauce (or to taste)

    •    Fresh parsley, chopped

Method

    1.    Heat oven to 200°C (fan 180°C).

    2.    Toss the new potatoes with olive oil and spiced Sussex salt. Roast for about 25 minutes until golden and crispy.

    3.    Meanwhile, mix the yogurt, garlic, lemon juice, hot sauce, a pinch of salt, and a drizzle of infused oil until smooth.

    4.    Spread the yogurt sauce onto a plate, pile the hot potatoes on top, and scatter with parsley, a little more salt, and infused oil.

    5.    Serve and enjoy!
