We select the finest quality English cold-pressed extra virgin rapeseed oil, carefully infusing with wood-roasted Naga chillies and wood-smoked, fermented garlic. To elevate the flavour profile, fennel seeds are wood-roasted and smoked in two distinct stages: lightly roasted for the primary fennel essence and heavily roasted for a delightful, crunchy, nutty texture. The oil is left for a minimum of two months to infuse, the flavour intensifies further the longer its left.
