2 organic egg yolks

1tbsp organic Dijon mustard

2 tsp of organic apple cider vinegar

150 ml of spiced sussex woodfired naga & fennel oil

100ml of organic olive oil

Pinch finishing salt

Method

  1. Add all the ingredients, apart from the oil, to a mixing bowl. Mix together with a whisk. Keep whisking whilst slowly adding the oil.
  • Once it starts to emulsify you can increase the speed. If the oil starts to split from the egg mixture, whisk in a few drops of water until it’s remulsified. Continue with the oil.

Tip- grate a little lemon rind to add a fresher dimension
